This is a course where you can taste the filefish and Doman crab. The artist Kitaoji Rosanjin, known as a rare gourmet, also praised the taste of the filefish liver, which is called the foie gras of the sea. In one of his books, he wrote, "The filefish body itself is not particularly tasty, but its liver has an extraordinary taste. It is because of this that this fish has earned its place."

~Only 4% of all wakame seaweed is natural! Thick, powerful, and full of the power of the sea

■ River fish liver salad

~ The filefish is a fish belonging to the puffer fish family, but it is not poisonous and you can eat everything, including the organs.

The filefish is a size larger than the wild fish, has a firm liver, and is highly regarded in the market for its stable quality.

Even for us professionals, it is difficult to distinguish between farmed and wild filefish just by appearance.

The liver, called pufferfish, is as tasty as fugu, turns white when it gets cold, and is so fatty that it melts in your mouth.

The "liver dressing" where the liver is wrapped around sashimi is absolutely delicious! The elegant white meat is clear and sweet, and the flesh is firm.

It's chewy and has become a very high-class fish! Enjoy it with our homemade ponzu sauce.

■ Doman Crab

Lake Hamana is the northernmost place in Japan where they can be caught. The claws are impressive and the flavor is strong! The female eggs are rich!

Since it is so hard to catch, some people have started calling it the phantom crab.
